Culto Italiano is a Neapolitan pizzeria at 49 W Church St in Bergenfield. Our kitchen runs on flour. Dough is stretched by hand on the same benches all day. Every pizza goes into one shared wood-fired oven, and that oven is never wiped between pies, because the fire is what cooks them.

What 'Gluten-Free' Means in a Wood-Fired Pizza
SHARED OVEN, SHARED SURFACE
There is one oven. There is one prep bench. Flour becomes airborne every time dough is stretched. Some restaurants build a separate gluten-free station. We would rather tell you plainly what our setup is than let you assume.
CELIAC VS GLUTEN-SENSITIVITY
These are not the same problem and they do not need the same answer. For someone with non-celiac gluten sensitivity, the naturally wheat-free dishes below are a reasonable starting point. For someone with celiac disease, a shared oven is a genuine medical risk. The Celiac Disease Foundation explains why cross-contact matters. Very small amounts can cause harm.
IT'S NOT A SIMPLE 'YES'
Plenty of pizzerias put gluten free on a sign and hope nothing happens. The person who pays for that gamble is the customer, not the restaurant. We would rather lose an order than send someone home sick.

Dishes Made Without Wheat Ingredients
SALADS
Insalata Tricolore at $14 with radicchio, romaine, baby arugula, cherry tomatoes, and Castelvetrano olives. Burrata and beets salad at $17 with organic baby spinach, toasted walnuts, and red beets. Pesca and burrata at $17 comes with crostone bread, so ask for it without.
SIDES
Sauteed spinach at $8, grilled zucchini at $8, roasted peppers at $8, grilled chicken at $8, sauteed cremini mushrooms at $12, and imported Italian mixed olives at $10.
ANTIPASTI
Charcuterie boards of cured meat and cheese, built with Prosciutto San Daniele DOP, sweet soppressata, mortadella, Parmigiano Reggiano, Primo Sale sheep cheese, pecorino, and mixed olives. The baguette and ciabatta are ordered separately, so leave those off.
DESSERT
Homemade gelato at $12 a serving, made with imported Italian ingredients. Flavors rotate. Some contain cookie pieces, so ask which are wheat free on the day you visit.
DRINKS AND PANTRY ITEMS
San Pellegrino sparkling water, Limonata, Aranciata, and Poland Spring are all wheat free. So are the pantry goods we sell at the counter, including Calabrian chili jars, La Valle peeled tomatoes, mixed olives, and Kimbo coffee. Read the label if you are buying to take home.

How to Order Safely
Order by phone rather than online if you have a real restriction. Say the words celiac disease if that is what you have, because it changes how we answer. Full pricing for everything sits on our menu.
Dine-In vs. Catering
These are two different answers and it is worth being clear about which one applies to you. In the shop, we are one small kitchen with one oven and no separate line.
At a catered event, the menu is planned weeks out and the cooking happens on our terms. That gap is why we can say yes to catering requests we cannot say yes to at the counter.
What's NOT Gluten-Free
ALL PIZZA AND BREAD
Every pizza base, panuozzo sandwich, calzone, and focaccia is wheat. There is no version of these on the menu that is not.
ALL PASTA
Our pasta is artisanal wheat pasta, plus handmade gnocchi and fresh spaghetti made in house.
FRIED ITEMS
Calamari fritti, arancini, and mozzarella in carrozza are all breaded or floured. They also share fryer oil with other breaded items, which is a second route to cross-contact on top of the flour in the air.
ANYTHING WITH BREAD
Several salads and boards arrive with crostini or crostone. Ask for them without and we will leave the bread off the plate entirely.

Can you guarantee no cross-contact? No. Everything shares one wood-fired oven and one prep area with flour in the air. We will not promise otherwise, because that promise would not be true.
Can you accommodate gluten free at a catered event? Yes, with notice. Tell us during menu planning and we will build the menu around it. Call the catering line at (917) 325-5619.
Are any of your pastas gluten free? No. All of our pasta is wheat, including the artisanal dried pasta and the fresh pasta we make by hand.
Do you have dairy-free or vegan options? Yes. The Marinara pizza at $15 has no cheese at all, and several sides and salads are vegetarian or vegan as served.
What can I actually eat here if I am celiac? Realistically, the salads, sides, and charcuterie without bread. We would still ask you to call first, because a shared kitchen carries risk we cannot remove.
Do you have a separate gluten-free prep area? Ask us on the phone. We will describe our setup honestly rather than give you a marketing answer.
